Recipe for Basic Bread

Ingredients

  • 6 deciliters water
  • 13-14 dl (approx 5 1/2 - 6 cups) wheat flour
  • or replace some with another flour of your choice
  • 1 tablespoon salt
  • 1 egg (optional. Use 5 dl water if you don''t add the egg)
  • 50 grammes fresh yeast or the equivalent dry yeast
  • Turmeric
  • Your choice of: chopped chillis, olives/rosemary, fresh herbs, chopped pickled lemon...

Cooking Directions

Heat water until it''s lukewarm if using fresh yeast, slightly warmer if using dry yeast. Place fresh yeast in bowl and add water, stir until dissolved. If using dry yeast, mix it with some of the flour and then add water and stir until dissolved.

Start adding flour, a little at a time. Add salt, turmeric and whatever else you want like herbs and such, then keep adding flour until you have a smooth dough. Sprinkle some flour on top, cover bowl with cling film and a towl and leave to prove for 45 minutes.

Knead dough and divide into 8 pieces. Roll each piece with your hands (they get flatter if you use a rolling pin) and place 4 on each baking tray. If you wish, prick with a fork, or cut a pattern into them. Cover with a clean towel and leave to prove for another 30 minutes. Set oven to 250 degrees Celsius (482 degrees F).

Place one tray at a time in the oven. After about 10 minutes or when the bread starts to turn brown on top, lower heat to 225 degrees C (437 F) and leave for approximately another 10 minutes.
