Recipe for Egg Soup
Ingredients
- Eggs(lightly beaten) 2
- Brown Dried Mushrooms(soaked) 3
- Roasted chicken(finely sliced) 300 gm
- Salt & black Pepper to taste
- Oil 1/2 tbsp
- Chicken Stock 5 cups
- Onions(cut into pieces) 2 springs
- Soy sauce 1 tbsp
- Coriander leaves(chopped) 1 tbsp
Cooking Directions
Mix the mushrooms and chicken in a bowl, season and keep aside.
Heat the oil in a soup pot, fry the mushrooms and port for a few minutes, add the chicken stock, and bring it to a boil.
Add spring onions and the beaten eggs to boiling broth, stirring lightly.
Add the soy sauce and serve garnished with coriander leaves.
