Recipe for Blueberries or Raspberries with Cream
Ingredients
- 2 cups fresh blueberries or raspberries
- 4 ounces reduced-fat cream cheese, at room temperature
- 2 teaspoons honey
- 3/4 cup low-fat vanilla yogurt, drained
- 2 teaspoons freshly grated lemon zest
- fresh mint (to garnish)
Cooking Directions
In a mixing bowl, add the yogurt, cheese and honey.
Using an electric mixer, beat at high speed until light and creamy.
Stir in the lemon zest.
Layer the blueberries (or raspberries) and lemon cream in dessert dishes or wineglasses.
Garnish with a sprig of mint and
serve.
