Recipe for Chicken Mac and Cheese

Ingredients

  • Boneless chicken 1 kg (flattened)
  • Macaroni 500g (small size)
  • Onion 1 large (finely chopped)
  • Sun dried tomatoes 250g (sliced)
  • Plain flour 3 tbsp (heaped)
  • Salted butter 150g
  • Fresh garlic 2 tbsp (crushed)
  • Crushed red chilli 1 & 1/2 tbsp
  • Salt 1 tsp
  • Black pepper powder 1 tsp
  • Paprika powder 1 & 1/2 tsp
  • Italian herbs 1 & 1/2 tsp
  • Frozen spinach 2 cup
  • Chicken stock 6 (6 cups hot water with 2 chicken cubes)
  • Milk 2 cups
  • Cream 2 cup
  • Cheddar cheese 1 cup
  • Mozzarella cheese 1 cup
  • Parmesan cheese 1/2 cup
  • Oil 3 tbsp

Cooking Directions

season the chicken with salt, pepper, paprika, oil 3tbsp, Italian herbs 1 tsp mix well, cover and leave it for 20 minutes.

Heat oil 1/3 cup and fry the chicken till gets cooked on both side, on medium flame.

Melt butter add onion, garlic and fry till gets soft, on high flame.

Add sundried tomatoes cook for 1 minutes.

Then add plain flour, crushed red chilli, Italian herbs and cook it for 1 to 2 minutes, on high flame.

Now add the chicken stock, cream, milk wait for a boil then add the macaroni mix, cover and cook on medium flame till the macaroni is cooked.

Add the frozen spinach mix and cook for 7 to 8 minutes till the sauce gets thick, on medium flame.

Then add Cheddar cheese, mozzarella cheese, parmesan cheese mix well.

Slice the chicken and add it in the macaroni mixture, mix well.

Serve hot with cold drinks.
