Recipe for Eggplant with Fried Onions

Ingredients

  • 1 medium eggplant, cut into small cubes
  • 1 medium potato, peeled and cut into small cubes
  • 1 medium onion, thinly sliced (or 1 cup of fried onions)
  • 1/4 tsp garam masala
  • pinch of turmeric powder
  • 2 tbsps coriander leaves, chopped
  • salt to taste
  • oil

Cooking Directions

Add turmeric powder, pinch of salt to potato cubes in a bowl. Mix to coat the potatoes well with the spices.

Heat 2 tbsps oil in a non-stick pan over medium heat. If using already-made fried onions, proceed to step

Otherwise, go to step 3.

When oil is hot, add the onion slices and fry until they are dark-brown. Remove and set aside.

In the same pan, add potato cubes and fry for about 5 minutes, stirring frequently so that the potato gets evenly cooked.

Add the eggplant pieces, 1/4 tsp salt, mix and cover. Cook for 5 minutes over medium heat.

Uncover, add 1/4 cup of water and mix again. Cover and cook for another 5-10 minutes until potatoes and eggplant are well cooked.

Add garam masala, mix. Check for salt and add as needed.

Add fried onions and mix well. Garnish with some chopped coriander leaves and serve.
